Peter Brunel

Peter Brunel was born in Val di Fassa in 1975. After graduating from catering school in Tesero, he moved to Bolzano, where he began to learn all about haute cuisine under Chef Giorgio Nardelli at the Parkhotel Laurin. He then moved to Villa Negri di Riva del Garda, where he was awarded his first, sought-after Michelin star in 2003, at just 28 years old.

He later became head chef at Chiesa in Trento before moving to Tuscany to run Ristorante Palagio59 in Rignano sull’Arno. In 2012 he was the mastermind behind “Chef’s Circus”, a series of gastronomic events that featured top chefs along with amazing jazz. Peter’s international experience, gained at Michelin-starred restaurants in France, along with his innate instinct for food that is both beautiful to look at and delicious to taste, mean that he creates his own original and distinctive cuisine, which has always been inspired by art, architecture and travel.

Examples of his food design were included in “The New Italian Design” exhibition at the Triennale Design Museum. After working as Executive Chef for the Ferragamo family’s Lungarno Collection, Peter developed his fusion style while working with restaurants such as the Nikkei Fusion Bar & Restaurant, Caffè dell’Oro and the gourmet Borgo San Jacopo, where his menu was awarded a Michelin star in 2015. Since 2019 Peter has been back in his beloved homeland of Trentino, where he has been working hard to make his dream come true – bringing a new star to the lakeside and making the area shine even brighter.
